Oh, doesn't that taste good!

          You would be advised to bring your taste buds along when you visit the Wake Forest Farmers’ Market Saturday, Aug. 14, because Cindy Karas will be there to show you how to make the most of the summer’s bounty of eggplant.
          She will be assembling Eggplant Parmesan and Ratatouille and demonstrating her techniques for those dishes. Karas is a regular at the market with her inventive recipes, and her new company, Sassafras!, is available for catering and meal planning.
          She can use a variety of eggplants in the dishes. The eggplant (or aubergine) grows in several shapes and shades from the familiar plump ones to skinny Japanese, from dark purple to white and even green, and the fruit is used in dishes worldwide.
          You will find several eggplant varieties in different vendors’ booths Saturday, along with tomatoes, onions and peppers that are used in eggplant recipes.
          And you will find the freshest squash, eggs, herbs, corn, artisan breads and baked goods (some gluten-free), granola, an array of goat cheese, jams, preserves, hand-made soaps, wool and knitted goods, fine arts, jewelry, garden art, plants, pottery, pasture-raised meats, and hand-made wood products.
